The use of Arduino to introduce basic programming concepts has been widely investigated by several studies in the literature. Despite of important contributions, we observed the lack of studies that evaluate such instrument to teach programming intermediate concepts, i.e., after the introductory programming topics. Therefore, this paper aims at comparing the influence of Arduino on students’ motivation when used to solve basic and intermediate practical programming exercises. An experimental study carried out with 62 students showed that students felt less competent when using Arduino to study programming intermediate concepts.

The use of Educational Robotic to support programming teaching has been investigated by several studies in the literature. Despite of contributions, we observed the lack of studies that use Arduino as main teaching method in programming disciplines. Therefore, this paper aims at evaluating students’ motivation when they use Arduino as a teaching method in the practical classes to present the programming initial concepts. An experimental study, carried out with 54, undergraduates showed that students’ motivation in the perception choice subscale was significantly higher in the Arduino teaching method compared to the Traditional teaching method.

Infographics have been used as learning materials due to their informative nature. Empirical evidence shows that this kind of visualization affects students’ learning and interest. However, providing further details on which parameters ensure positive results is still required. An example of such parameter is the complexity of the infographics. Therefore, there is a need to obtain information on the impact of infographics of different levels of complexity in learning. Observing the lack of guidelines to classify the complexity of infographics, we propose a framework that considers three dimensions (i.e., visual, verbal and conceptual) to score infographics and, generate a complexity measure. We carried out a controlled experiment to evaluate the framework and verify if our complexity measure reflects the real perception of the users. Our results showed that users learned more from infographics classified as low and medium complexity. We conclude that the complexity of an infographic is a factor that affects learning and should be considered by teachers and content creators when deciding to use infographics as learning materials.

Chitosan (CS) is a polymer obtained from chitin, being this, after the cellulose, the most abundant polysaccharide. The fact of (i) CS being obtained from renewable sources; (ii) CS to possess capability for doing interactions with different moieties being such capability dependent of pH; (iii) plenty of possibilities for chemical modification of CS; and (iv) tuning the final properties of CS derivatives makes this polymer very interesting in academic and technological points of view. In this way, hydrogels based on CS and on CS derivatives have been widely used for biomedical applications. Other important technological applications can be also cited, such as adsorbent of metals and dyes in wastewater from industrial effluents. In pharmaceutical field, hydrogels based on CS are often used as drugs’ and proteins’ carrier formulations due to the inherent characteristics such as the biocompatibility, nontoxicity, hydrophilicity, etc. This chapter is an attempt for updating and joining the plenty of available information regarding the preparation, characterization, and biomedical application of hydrogels based on chitosan and chitosan derivatives. More than 260 references are provided, being the majority of them published in the last 10 years.

Understanding the crystallization behavior of fats and oils is essential to ensure certain desirable characteristics in a given industrial application. In recent years, some advances in the structuring of lipid phases have enabled a direct influence on the food properties. The structuring mechanisms of lipid bases can be classified as either conventional or unconventional. Conventional crystallization mechanisms consist of nucleation, growth, and maturation of the crystals, thus resulting in a crystalline lattice. Co-crystallization or seeding agents and emerging technologies such as ultrasound can be used to aid in crystallization and improve the physical properties of fats and oils. Unconventional mechanisms bring organogel technology as a trend, which consists in the use of self-assembly agents to entrap the liquid oil, resulting in a structured gel network. In this chapter, the formation process of crystalline networks and gel networks will be presented in stages, highlighting the main differences related to the mechanisms of formation and stabilization of both types of networks.
